Ingredients:
 4 Cod fillets (or other white fish)
 3 cloves of garlic
 1 handful(s) parsley
 1 glass of wine
 3 tbsp(s) double cream
 1 tsp(s) white wine vinegar
 3 tbsp(s) wholegrain mustard
I have been cooking and enjoying this recipe (which I think was Nigel Slater originally) with various types of fish for years.
Cooking Steps:
Finely chop the parsley and garlic.

Spread the mustard over the fish, then role the fish in the parsley and mustard.

Heat the oven to about 200c gas mark 6.

Place the fish in a baking tray or gratin dish, pour the wine around them and bake for 10-12 minutes.

Remove the fish and boil the liquid to reduce it by half, add the vinegar and cream and reduce further until the consistency required is reached.

Pour around the fish and enjoy.
