Ingredients:
 200 gm(s) digestive biscuits, crushed
 50 gm(s) pinenuts, crushed
 100 gm(s) butter, melted
 400 gm(s) cream cheese
 200 ml(s) double cream
 200 gm(s) white chocolate, melted
 50 gm(s) icing sugar
 100 gm(s) blueberries
Inspired by another cheesecake in my cookery book, I decided to make my own version using a pinenut biscuit base, white chocolate cheesecake dotted with fat blueberries.

Cooking Steps:
Crush digestives and pinenuts, melt butter, mix well.
Pat down into a springform tin, chill in fridge.
Melt chocolate in a bain marie on the hob.
Meanwhile soften the cream cheese, cream in the icing sugar, double cream and melted chocolate.
Gently fold in the blueberries.
Spread over the top of the biscuit base, refrigerate overnight.
