2 red onions chopped
2 garlic cloves
2 small green chillies
1 bunch of coriander roughly chopped stalks an all
2 tsp(s) ground coriander
1 tsp(s) ground cumin
1/2 tsp(s) tumeric
1 pinch(s) saffron
2 tbsp(s) vegetable oil or ghee
1 tsp(s) sugar
500 chicken thigh fillets
400 gm(s) natural yogurt
a fresh coriander based curry with a slightly sour flavour - to sweeten up replace yog with coconut milk.

Cooking Steps:
Process onions, garlic, coriander and chillies to form a smooth paste. If the mixture is a little on the dry side, add a little water but not too much, it depends how moist your onions are.
Heat oil in a large pan and add the above mixture and cook over a medium heat until the oil starts to separate from the onions (approx 10 mins)
Add the spices and carry on cooking for a further 5 mins.
Add the Chicken to the pan and cook until chicken is browned. Finally add the Yogurt and sugar and simmer, with lid on pan for 15 mins or until the chicken is tender.
I have also replaced yogurt with coconut milk, giving the sauce a slightly sweeter taste.
