Tuna with sherry and sweet onions

Ingredients:
 2 thick tuna steaks
 1 clove of garlic
 100 ml(s) medium-dry sherry
 1 sweet onion
 1 handful(s) parsley
This is originally a recipe I had in Spain. Is great if you can find Spanish onions and very fresh tuna!
Cooking Steps:
Rub the garlic all over the tuna, pour 1/3 of the sherry over it and leave it to marinade in the fridge for 1 hour.

Slice up the onion and fry in a frying pan over a low heat for about 30 minutes, pour in the sherry and continue to cook until the alcohol has evaporated and you are left with a delicious marmalady sauce. Set aside.

Fry the tuna over a high heat in the frying pan. Depending on how rare you like it either a minute or 2 each side.

Add the onion sauce, the marinade and heat through.

Serve with the parsley finely chopped on top of the tuna.
