Baked Trout with tomato, lemon and basil

Ingredients:
 2 Whole trout
 100 gm(s) cherry tomatoes
 2 handful(s) fresh basil
 1 tbsp(s) olive oil
 1 lemon
 1 knob of butter
A really easy quick supper. The tomato and basil, as always, really bring out the flavours of the fish.

Cooking Steps:
Chop up the tomatoes and basil and juice the lemon. Mix together with a little olive oil to create a fragrant citrus paste.

Heat the oven to 180/gas mark 6

Place the tomato citrus paste inside the trout, dot on the outside with butter, season and wrap with foil.

Cook in the oven for about 12 minutes or until cooked.
