What are tags?

2 young chickens
1 large onion, grated
2 garlic cloves, crushed
120 ml(s) olive oil
juice of 1 lemon
1 tsp(s) paprika
2-3 saffron strands, soaked in 1 tbsp boiling water
salt & freshly ground black pepper
pitta bread & cos lettuce leaves, to serve
Needs 2 hours' marinating time, but cooks quickly.

Cooking Steps:
Cut the chicken into small pieces, removing the bone if preferred, and place in a shallow bowl. Mix the grated onion, garlic, olive oil, lemon juice, paprika and saffron, and season with salt & pepper.
Pour the marinade over the chicken, turning the chicken so that all the pieces are covered evenly. Cover the bowl loosely with clear film and leave in a cool place to marinate for at least 2 hours.
Thread the chicken onto long, preferably metal skewers. Cook for 10-15 minutes on a barbecue or under a moderately hot grill, turning occasionally. Ensure that the chicken is cooked all the way through by inserting the point of a sharp knife to check that the juices are clear.
Serve with pitta bread, lettuce and tzatziki.
