Ciabatta-Topped Salmon

Ingredients:
 4 x 150 gm(s) skinless & boneless salmon fillets
 110 gm(s) ciabatta breadcrumbs
 2 gherkins, drained & finely chopped
 6 pitted black olives, drained & finely chopped
 2 sundried tomatoes, chopped
  finely grated zest of 1 lemon, plus extra wedges
 1 tbsp(s) extra virgin olive oil
A Co-op "Green Dot" recipe.
Cooking Steps:
Preheat the oven to gas mark 6 / 200c / 180c fan. Line a baking sheet with foil and add the salmon fillets.

Mix together the breadcrumbs*, gherkins, olives, tomatoes and lemon zest and season with salt and black pepper. Top the salmon fillets with the mixture and drizzle over the oil.

Bake for 20 minutes until the topping is golden and the salmon cooked through. Serve with new potatoes and mixed salad leaves, and garnish with lemon wedges and chopped chives.

*For the breadcrumbs, blitz the ciabatta in a processor or blender. For a coarser crumb, simply grate the bread.
