Ingredients:
 2 lemongrass stalks, outer leaves removed, roughly chopped
 2.5 cm piece galangal root, peeled & roughly chopped
 2 garlic cloves, peeled & finely chopped
 2 onions, peeled & roughly chopped
 1 red pepper, deseeded & roughly chopped
 1 tsp(s) sweet paprika
 1 tsp(s) fennel seeds
 0.5 tsp(s) chilli powder
 0.5 tsp(s) turmeric
 0.5 tsp(s) curry powder
 1 tsp(s) shrimp paste (available from Oriental stores)
Makes about 125ml. Oriental ingredient from the Wagamama cookbook.
Cooking Steps:
Combine all the ingredients in a blender and blitz to a smooth consistency.

This is a bright and invigorating sauce. It has a Thai theme with all that lemongrass and galangal. It will keep for a few days in the fridge.
