Ingredients:
 300 gm(s) raw king prawns (defrosted, rinsed & drained)
 2 tbsp(s) vegetable oil
 1 onion, finely chopped
 2 cloves garlic, peeled & finely chopped
 10 gm(s) ginger, peeled & finely chopped
 2 tsp(s) Thai green curry paste
 400 ml(s) coconut milk
 3 freeze-dried kaffir lime leaves, crushed
 3 spring onions, trimmed & sliced
 2 tbsp(s) coriander, chopped
Quick & easy Thai green curry
Cooking Steps:
Heat a wok or large frying pan over a medium heat, add the oil and fry the onion, garlic and ginger stirring constantly for around 4 minutes.

Stir in the curry paste, coconut milk, prawns, kaffir lime leaves and spring onions.

Bring to a simmer and cook gently, stirring occasionally, for 3-4 minutes.

Stir in the coriander and serve immediately with boiled rice and lime wedges.

Classic thai food. Really quick and so tasty. If you haven't got the canola oil, just use sunflower or sesame oil.
