Ingredients:
  quarter of a watermelon, peeled & cut into 1cm thick slices
 250 gm(s) Feta
 1 small red onion, sliced
 80 ml(s) extra virgin olive oil
 2 tbsp(s) red wine vinegar
Fuss-free salad by David Herbert.
Cooking Steps:
Layer the slices of watermelon on a serving platter. Top with a layer of feta and scatter over the sliced onion.

Combine the olive oil and red wine vinegar in a screw-top jar and shake well until combined. Pour over the salad and season with a little freshly ground black pepper.

Tip: try to find a small seedless watermelon for this recipe. The salad is better if the melon is chilled before cooking.
