Ahhh I also make a version of this at home - glad to see I'm not alone! I chuck a load of jalapenos on with the top layer of cheese to give it an extra kick for those who like it hot.

Vegetarian Mexican lasagne

Ingredients:
 400 gm(s) frozen vegetarian soya mince
 400 gm(s) canned chopped tomatoes
 1 tbsp(s) chilli powder, or to taste
 1 vegetable stock cube
 1 tbsp(s) paprika, or to taste
 6 tortilla wraps
 200 gm(s) hard cheese - cheddar or other tasty equivalent
  to taste salt and pepper
A mix of my favourite cuisines - Mexican and Italian. So, so simple to make, and very tasty and filling.
Cooking Steps:
Pre-heat your oven to 200 F.

Put chopped tomatoes, vegetable stock cube chilli powder, paprika and soya mince into a large pan, and cook gently for 10-15 minutes until soya is hot. Add salt and pepper to taste. The sauce should be quite juicy as it will be soaking into the tortillas, so add water if necessary.

In the meantime, cut the tortillas up into 6 pieces, as if you were cutting a pizza. Grate the cheese and put aside.

Put a layer of tortilla pieces into a greased baking dish: add a layer of soya mince. Follow with a sprinkling of grated cheese.

Add another layer of tortilla, then another layer of soya, then a sprinkle of cheese.

Add a final layer of tortilla pieces, then the rest of the soya, and top with the rest of the grated cheese.

Cook in the middle of the oven for 10 minutes or so, until cheese is bubbling and brown.

Serve with sweetcorn and fresh bread.
